Mobile juice bar focuses on 'fresh' options
Memphis food truck enthusiasts looking for the skinny on healthy eateries will not have to go far this summer. A new mobile juice bar hits the streets of Memphis starting in late June.
Owner Chris Gray said So Fresh Mobile Juice Bar plans to serve up smoothies and juices with a twist.
"Menu will have five juices, we will switch out seasonal [juices]. We will have wraps, cakes made from the pulp of the juice," said Gray.
Chris, and the friends and neighbors who helped him, were inspired by a healthy option on wheels that would bring something new and fresh to the Memphis food truck scene.
Similarly to the juices and food, Gray built the truck from scratch – and in his Midtown backyard.
"Bought the truck in November, building it myself with my own two hands. It's been a huge challenge," said Gray.
Instead of using a generator to run his truck off of a battery bank, Gray will use solar power.
